Great halibut comes from both the northeast and northwest coasts. It is the cold water that makes it so rich and moist. If you can’t find really good halibut, substitute sea bass, snapper or whatever is best at the market.

Always use fresh citrus juice in recipes as it makes a huge difference in the finished product. Shrimp are sold small, medium, large and jumbo or by the count as in 16-20, 21-25 and this refers to how many are in each pound. It’s not a bad idea to keep a bag of frozen, fully cooked, peeled and de-veined, shrimp in the freezer. They can really come in handy when unexpected guests drop by. Once thawed, pre-cooked jumbo prawns can be used as an appetizer or thrown into a stir-fry or you can use them in the recipe below; just broil till warm through.
